Cook Healthy And Easy With The Veganbox.nl

Everyone knows about Hello Fresh and Marley Spoon. A weekly box with recipes and the exact amount of ingredients you need. The vegan box has the same principle but they only make plant-based recipes.

This box is ideal for busy people who want to eat healthier and more plant-based, but do not have the time to find it all out for themselves. With the box in the house, you can immediately go into the kitchen and follow the recipes. Most of the recipes take between 30 and 40 minutes.

Last week I received my first box and I was positively surprised. The box arrived on a Tuesday night. That same day I received a message from PostNL with the time of delivery within a time window of one hour. In case you are not home, you can ask the postman to leave the box at one of your neighbors or even under the chair of the front garden.

Quickly I unpacked the bags and everything looked neat and fresh. The box contained three vegan recipes with the exact amount of ingredients for two people. Most of them were organic. And what I liked a lot, is that most ingredients are wrapped in paper. My box only had a few ingredients wrapped in plastic.veganbox.nl

From the recipes, I started with the gyros from the brand Vleesch Noch Visch. Normally, I don’t eat much meat replacements. But this gyros I will definitely like to eat again. The tzatziki made the dish very tasty. This recipe was the easiest of the box to make.Vegan gyros Vlesch noch Visch The next recipe was a yellow curry with crispy cauliflower. Curries are one of my favorite dishes. With this recipe, I learned how to make it different from how I normally cook it. The crispy cauliflower was a nice touch. I will use it for wraps or tacos as well.

The last recipe of the box was the one I was, in the first place, the less enthusiastic about. But this one surprised me the most: Pearl couscous with roasted pumpkin and cranberries. Vegan Dishes To Make This Autumn

Hello Autumn, hello comfort food. My favorite season is here. In order to make this season a little bit more sustainable, let’s use as much as possible fresh ingredients that come from the region. September, October, and November is the best season to eat pumpkin, squash, cabbage, sweet potatoes, carrots, and Brussel sprouts. Although tomatoes and cucumbers can still be grown in Dutch greenhouses in an energy-efficient manner, most greenhouse products are more polluting for the environment than vegetables and fruits that grow in the open air. The best and cheapest is to eat products that are grown on Dutch soil. Here are some easy recipes you can make this season:

TOP 5 VEGAN RESTAURANTS IN AMERSFOORT

Well, let´s be honest, been vegan in Amersfoort is rather an exotic out-of-this-world kind of thing. On this blog post, I am talking about normal restaurants where, as a vegan, you can find some dishes to eat. Besides the yoga studio/cafe Bindi* there is no 100% vegan or vegetarian restaurant in the city in Amersfoort.  Don´t let this stop you from having a nice dinner on the weekend because I have found some vegan-friendly places for you. These are my top 5 favorites:

What to order: Create your own bowl of salad. You can choose from these ingredients as the basis: mesclun, spinach or arugula. For the filling, you can choose one of these: quinoa, bean mix, lime beans, and cauliflower rice. For the veggies, you may choose up to three of these: zucchini, sun-dried tomato, cherry tomato, broccoli, radish, cucumber, corn, white cabbage, sugar snaps and red bell pepper. Additionally, you can add vegan chicken! They sell the one from the “vegetarische slager”. All the dressings they use are vegan. My personal favorite is the one with soy sauce, ginger and sesame oil.

2. Italian Restaurant Lorenza

What to order: As a started the baked champignons with garlic and white wine and as the main course the vegetarian pizza without the cheese but with arugula instead. The pizza has artichoke, capers, bell peppers, mushrooms, onions, and garlic. You can order any vegetarian pizza without the cheese, but this one is the one I like the most.

What to order: The “Woodstock” burger wich is a vegan burger with quinoa as the main ingredient. Here is the thing: You have to order it without cheese and creme fraiche.

4 Thai restaurant “Mi-Yao”

What to order: As a starter the deep-fried spring rolls. They are filled with cabbage, carrot, garlic, glass noodles and soy sauce. As the main course, you can order the green curry and the tomato salad. Make sure to order the curry without fishsauce. The portion of rice is very small so I recommend you to order an extra portion right away :). As a desert, you can order Thailand’s favorite: sticky rice with mango.

THIS IS WHERE I GET MY VEGAN RECIPES INSPIRATION FROM

Having a vegan lifestyle is one of the best decision I have made in my life. I eat now only fruit, nuts, grains and vegetables and feel so much healthier than before. This form of eating is relatively new for me, so I am always on the look for recipes to try out. I discovered a very simple way to find vegan meals via the page from the Albert Heijn supermarket. On the search field (on the left menu bar) you can just type in “zoek: veganistisch” and then you get a lot of ideas of what to cook. And what I love is that I am sure I will find the ingredients I need in the supermarket here in The Netherlands.

I have been using this page for a while now and I want to share with you some of my favorite recipes. They are all easy and quick to make and some of the recipes even have a video!

1. Guacamole

Guacamole is the easiest and fastest recipe ever. All you need are tomatoes, onions (I prefer red ones), avocado, lemon juice and I like a little bit of coriander and cayenne pepper powder. Everyone has a different way of dong it but I like this recipe the most. To accompany it I use tortilla bread, chips, toast or I add it to salads and burgers.

2. Broccoli soup

Soup is my favorite way of eating my veggies. I normally make soup out of the veggies I find in my house. But my all-time-favorite is this Broccoli courgette soup. All you need is broccoli, courgette (with the skin), onion, garlic (It’s not in the recipe but It´s my personal add-on) and herbs broth.  I like to eat soup with bread or rice. Broccoli is a very good source of fiber, vitamin B1, magnesium, omega-3 fatty acids, protein, zinc, calcium, iron among other nutrients our body needs. Zucchini is full of antioxidants and fiber. It is also a great source of potassium, vitamin A, B1, B2, B6, magnesium, omega-3, copper, and phosphorus.

3. Curry with Chickpeas

Curry with chickpeas, coconut milk, and rice. I LOOOOOOOVE curries. Green, yellow, red, massaman, you name it I just love it. This recipe I use as a guideline but I like to add all kind of veggies I find in my fridge. Chickpeas are my favorite source of protein. One cup of boiled chickpeas has 270 calories, 45 grams of carbs, 4 grams of fat, 15 grams of protein and 13 grams of fiber. It’s also a good source of a number of other minerals including magnesium, zinc, and copper, as well some other B-vitamins.

4. Summer salad with mango

On hot summer days, my body feels like eating cold recipes and this salad is my favorite. In the country where I come from, we eat mangos the same way Dutch people eat apples. When I tried this salad with mangos on it I found my go-to summer ingredient. The ingredients of this recipe are mango, avocado, red or yellow bell pepper, lemon juice, strawberries, coriander, and lettuce. I like to accompany this salad with falafel balls or any kind of beans burgers.

5. Potatoes and veggies in the oven

This recipe is super easy and a no-brainer. Literally just cut all the ingredients and spread them evenly on a large roasting pan and set them in the oven. I like to add a little bit of olive oil, salt, pepper, and fresh rosemary. This recipe suggests normal potatoes, but I prefer to use sweet potatoes and bell peppers mix. I also like to add onions, carrots, champignons, broccoli and all the veggies that I have at home and feel like eating.
Sweet potatoes are high in vitamin B6, vitamin C, D, iron, mag­nesium, potassium. Their rich orange color indicates that they are high in carotenoids like beta carotene and other carotenoids, which is the precursor to vitamin A in the body.

VEGAN STARTER TIPS

Today I´m celebrating 5 months of been vegan! Wuhuu and I couldn’t feel happier about it. As you might know, I have been conscious about fashion and support second-hand and ethical brands since a long time. Funny enough, I was never conscious of what I eat. Coming from Colombia, a land where if you don´t eat meat you get chicken, I grew up thinking that I needed to eat meet at least once per day

I started to get more awareness about the veil industry and the consequences to the environment when I watched the documentary of Leonardo Di Caprio “Before the flood”. I was in the mood for more documentaries about it and that´s when I watched Cowspiracy. After that, literaly from one day to the other I started my vegan journey. I still have a lot to learn, but after 5 months I feel confident to give my top 6 starters tips.

1. Clean up your shelves and fridge
Once you made the decision of start eating vegan, make sure that your house is vegan proof. Go through your shelves and fridge and put aside the nonvegan food you still have. You can then decide whether to finish it up or give it to your nonvegans friends and family. It is important that once you made the decision, your house is vegan proof at least in the kitchen.

2. Print out a poster of vegan nutrition
Hang posters on your fridge with information about where to find Calcium, Protein, Iron, vitamin D, B12, and Omegas. Those are the top nutrients that vegans may fall short on. You can go through Pinterest and choose the one you like the most. This one HERE was very helpful to me. With the pass of the time, you will learn this. It is important that you have them visible so that you eat enough of all the nutrients your body need. In HERE you can find more information about how much of each you should eat.

3. Stuff your shelves and fridge with vegan approved food.
Go for a big grocery shopping haul and get all the fruits and vegetables that are in season and that you like as well as all seeds, nuts and legumes and grains. As seeds and nuts, I  bought almonds, walnuts, pumpkin-, flax-, chia-, and sesame seeds. And legumes and grains I got kidney beans, red and brown lentils, green peas, peanuts, chickpeas, rice (integral), oats, corn, couscous (integral), quinoa (integral). This stash is basic for this new way of eating. For me, it lasted long until I needed to go to the supermarket again. This is helpful because you won´t run out of vegan things to eat and you can combine these ingredients with fruits and veggies.

4. Plan ahead and be prepared
Make sure you always have enough food that you can eat in your house, at work and basically in your bag. On my bag, I always carry with me an apple or any other fruit that won´t smash and dirty my bag, and I also have hummus sandwiches or peanut butter sandwich with me. I used to commute to Amsterdam and waiting in the station is the perfect moment to eat. If you are always prepared you won´t be hungry and you will save some money. 😉

5. Have fun!
Once you are all settled, you can start experimenting with new recipes and discover new fruits and vegetables. I live in The Netherlands and I have found great recipes via http://www.ah.nl. Simply type the ingredients you have + vegan and you will find a lot of recipes to choose from. This technic you can also use in Google.

6. Stay connected
The second I decided to been vegan I joined a couple of vegan communities that I find very helpful. It is important to find people like you, with the same struggles. I found very helpful people in these communities. If you are using Facebook, join some vegan groups and dare to ask questions and be active. Once in facebook, write down on the search function the word vegan and you will find groups and you can choose a few that are in your country and language. I started following also vegan blogs and vegan Instagram accounts.This has personally helped me to continue my journey as a vegan and feel connected to others.
